Chickpea & Tomatoes
Flavorful and nutrient packed dish that is quick make and sure to make you come back for seconds.
Ingredients:
Tbsp olive or grapeseed oil
⅓ Cup diced onions
2-3 Fresh crushed garlic cloves
1 Can no salt added petite diced tomatoes
½ Tbsp thyme
½ Tbsp oregano
½ Tbsp paprika
½ tbsp turmeric
1 Can low sodium garbanzo beans
Himalayan pink salt & black pepper *
*to taste
Directions:
Heat olive oil or grapeseed oil in a pot and saute onions and garlic . Add thyme and oregano and cook till slightly translucent (3 minutes).
Add diced tomatoes. Cook covered for 3 minutes letting flavors combine.
Add chickpeas and cook for an additional 7-10 minutes adding paprika and turmeric.
Cook until chickpeas are tender.
