Chickpea & Tomatoes

Flavorful and nutrient packed dish that is quick make and sure to make you come back for seconds.

Ingredients:

  •  Tbsp olive or grapeseed oil 

  • ⅓ Cup diced onions 

  • 2-3 Fresh crushed garlic cloves

  • 1 Can no salt added  petite diced tomatoes 

  • ½ Tbsp thyme

  • ½ Tbsp oregano

  • ½ Tbsp paprika

  • ½ tbsp turmeric 

  • 1 Can low sodium garbanzo beans

  • Himalayan pink salt & black pepper *

*to taste

Directions:

  1. Heat olive oil or grapeseed oil in a pot and saute onions and garlic . Add thyme and oregano and cook till slightly translucent (3 minutes).

  2. Add diced tomatoes. Cook covered for 3 minutes letting flavors combine.

  3. Add chickpeas and cook for an additional 7-10  minutes adding paprika and turmeric. 

  4. Cook until chickpeas are tender.
